In honor of the upcoming Super Bowl XLV this weekend (and yes, I will be rooting for the Green and Gold :)), I thought I’d share with you one of the yummy entries I’ve received for the 2011 Homegrown Recipe Contest so far:
Interception Perfection Dip
Ingredients:
- 1 Tablespoon Olive Oil
- 1 1/4 c. shallots (thinly sliced)
- 2 garlic cloves, minced
- 3/4 c. mayonnaise
- 3/4 c. sour cream
- 4 oz. blue cheese (room temperature)
Directions:
Heat oil in heavy medium saucepan over medium-low heat. Add shallots and garlic. Cover and cook until shallots are deep golden brown (caramelized), stirring occasionally (about 20 minutes). Cool.
Whisk together mayonnaise and sour cream in medium bowl. Add blue cheese. Using rubber spatula, mash mixture until smooth. Stir in caramelized shallots. Season dip to taste with salt and pepper. Cover dip and refrigerate until flavors blend, about 2 hours. (Can be made up to 2 days ahead. Keep refrigerated.) Serve dip chilled or at room temperature.
