Summer Squash Bread Recipe
I just received this amazing submission to our 2011 Homegrown Recipe Contest the other day! This one comes to us from Lourie in St. Petersburg, Florida:
Summer Squash Bread
Ingredients:
- 3 eggs, beaten
- 2 c. white sugar
- 1 c. vegetable oil
- 2 t. vanilla extract
- 3 c. all-purpose flour
- 3 t. baking powder
- 2 t. ground cinnamon
- 2 t. ground nutmeg
- 2 c. shredded summer squash
Directions:
- Preheat oven to 325°F (165°C). Grease a 9″ x 13″ baking dish.
- In a large bowl, use an electric mixer to beat eggs until fluffy. Beat in sugar, oil, and vanilla. Gradually mix in flour, baking powder, cinnamon, and nutmeg. Fold in squash and transfer to prepared baking dish.
- Bake for 45 minutes in preheated oven or until knife inserted in the center comes out clean.
